Thomas-Hsi Cabernet Sauvignon 2013

This is a glorious example of micro-production Cabernet at its best! The bouquet is intense, offering plenty of blackberry, crème de cassis, crushed violets, and anise. There is a distinctive mountain quality here, with pure dark fruit, briary notes, baking chocolate and youthful structure. This wine is densely packed right now and will continue to age gracefully in the cellar for a decade or more! Pairs well with andouille-crusted filet mignon with garlic sauce, baby burgers with angry onions, coq au vin, moroccan spiced lamb sausage.
