Shinas Estate 'The Guilty' Shiraz 2023

Inky ruby with violet and vanilla notes layered over dense, ripe plum. Firm, grainy tannins provide structure while dark berries and floral hints keep it lively. The finish is long, sappy, and beautifully balanced, carried by fine-grained tannins.

95% Shiraz, 5% Cabernet Sauvignon. 

The fruit was 100% destemmed and fermented in stainless-steel tanks, spending 4-6 days on skins for gentle extraction. After fermentation, the wine was basket-pressed to old 300L French and American oak barrels, where it aged for 18 months.  The wine was then naturally settled without fining and coarsely filtered to stainless-steel tank to sit until bottling with a nominal sulfur addition..

Just 950 cases were produced.
