This deeply colored wine has characteristics of stewed red fruits in brown butter — salty and fresh yet decadent. The palate pairs vivid, transparent fruit with strong tannic structure. A great pairing for meat dishes.
Grapes are macerated on skins for 10 days; fermented and aged entirely in qvevri until bottling after one year.
This collection of over 150 grapes was given to Pheasant’s Tears by the Ministry of Agriculture to help preserve and research indigenous grape varieties. It’s a co-plantation and co-fermentation of a mix of yellow, green, pink, red, purple and blue varieties, a dayglow spectrum of color and texture.
Made with ancient indigenous Georgian varieties including Rkatsiteli, Saperavi, Tsolikouri, and hundreds more.
