Mineral driven and dry with playfully notes of citrus and pear with the faintest whisper of white flowers.

Blend: 50% Cabernet Franc, 25% Chardonnay and 25% Chenin Blanc.

Sustainably farmed. Hand harvest. Very gentle pressing of whole bunches. Primary fermentation in stainless steel at about 18 C to retain freshness. Secondary fermentation in bottle with a minimum of 20 months on lees. Around 1g/l dosage to balance.
