Passion fruit, lime, ripe grapefruit, and green apple add complexity, while subtle minerality gives a sense of purity, freshness, and revitalization.
100% hand harvested Sauvignon Blanc. Fermentation takes place with wild yeasts in stainless steel tanks under controlled temperatures, which keep the fruit flavors lively. Aging for 7 months on lees adds complexity and texture not easily found.
